Why does sucrose in its powdered form taste sweeter than sucrose in its crystalline form? ?

Because it's dissolved faster (almost instantly)in the saliva, hits the taste buds for sweet and more enters the bloodstream faster than in crystalline form. There's also more surface area for the saliva to dissolve against.
The crystalline form simply takes longer to dissolve.
