Do you have to be rich to eat a proper vegan diet and get all the nutrient you need?
I notice vegans and vegetarians mention eating things like tempeh, seitan, quorn, etc. All of these designer faux meats cost a lot at least where I stay. I saw seitan "jerky" in the health food market and it was considerably more expensive than the elk and ostrich jerky.
I am very curious how would someone make this work if their monthly food budget for three people was like $500-600, or less than that? Here are some examples I notice in my local market:
Silken Tofu: $4.50
Seitan per lb.: $4.00
TVP based meal starters: $3.00 and up
Quorn products: $5.00 and up
Organic produce: (depends on product, but usually about $1 to $2 higher than regular produce as a rule).
Suppose someone doesn't have this kind of money to spend every shopping trip? What can they do to ensure they get proper nutrition from vegan diet?
Goodness, no. My food budget for the month is $120, and I spend quite a lot on my Diet Pepsi addiction.
Eat lots of pulses - a half-pound bag of kidney beans, chickpeas or lentils at my local grocery is 68 cents - throw them into soups, stews, chilis, grind into hummus or refried beans, etcetera. A 5 pound bag of cooking carrots is only 3 or 4 dollars; a giant head of cabbage is 1 dollar; 10 pounds of potatoes costs me 4 dollars; green and red peppers are 1 dollar a pound; tomatoes cost 1 dollar a pound, not to mention how cheap canned tomatoes are. You can make tons of stews, curries, soups or stir-fries with those, and add in a little bit of more expensive veg to flavour it up.
For other proteins, peanut butter costs maybe 3 or 4 dollars for a huge jar. Two cups of almonds cost 4 dollars, and you can stretch them out as salad topping or a little bit of protein to a salad or stir-fry.
I go to the bulk store for TVP, since I can get a pound for 3 bucks, and just throw it into my chilies, tacos or pasta dishes. I don't know why the silken tofu costs so much where you live - try another grocery, they're overcharging you. Tofu at my grocery costs $1.99 for one pound. That's about par for a block of tofu.
