Why does peanut butter make more crumbly shortbread?
If I make shortbread biscuits (mixing sugar, flour and butter), I can add almost anything for a biscuit aroma without much change, but if I add peanut butter, biscuits came out very dry and crumbly. Why is that? I usually use butter spread for these biscuits because it uses regular butter to make cookies out more supple and less crunchy. Is this because the vegetable / unsaturated fat content?
There is a large amount of sugar, in addition to various oil added in the processing of peanut butter brand name most. More sugar will give you a cookie, dry crispier. spread butter had been whipped with extra oil and water. There is little fat to a certain volume of butter spread, so the cookies you have a different consistency. Other materials that affect your cookies is the choice of flour. Many shortbreads replace some flour with cornstarch. It all depends on the texture you want. There are several variations of shortbread on the link below.
