Meal ideas w/ these ingredients?

I'm going on the slow carb diet. My friend had much success and lost 51 pounds in 3 months on this diet so I'd thought I'd try it out! I have one free day a week, but 6 days a week I can only eat these ingredients:

Proteins:
Egg whites with one whole egg for flavor
Chicken breast or thigh
Grass-fed organic beef
Pork

Legumes:
Lentils
Black beans
Pinto beans

Vegetables:
Spinach
Asparagus
Peas
Mixed vegetables

For each meal I can only have one from each category. If you can think of breakfast ideas that would be great, but lunch and dinner ideas I'd like as well. Not much to work with.


One thing I make when I can't think of anything else is scrambled eggs with vegetables mixed in... Spinach would be especially good, of your list. Any kind of beans can work with eggs, too.

But are those things really all you're going to eat for the next few months? You'll get bored...
