Are all oat bran muffins made with whole grain?
I ate a muffin yesterday that was really good. The muffin seemed grainy, like it had some fiber in it. Does this mean it was whole grain, or could it have been a trick?
Being a former chef from Canada, oats like wheat has several layers to the grain, rolled oats are the whole grain either steamed and rolled or if old fashion just the grain rolled between steel rollers to flat it into a cereal grain, Oat bran is the bran from the grain, like wheat germ it is a inner kernal from the oat grain.
It is high in fiber and rich in nutrients, like whole wheat bread the ratio of white flour to WW flour is dependent on the style of bread, with muffins like cake the structure is less gluteness, so for oat or oat bran muffins it would be 30-40% by volume.
Find one with fruits and nuts or seeds, they pack a more power and have not only more fiber but a daily fruit and veg minimum.
